Born and raised in New Orleans (not the suburbs y’all), Josh has brought with him an insatiable lust for exceptional food, great music and Sarah. But an authentic bowl of gumbo or jambalaya were much harder to find in Colorado, so he decided to leave lawyering and become a chef.
“I always said if I could go back and start over I’d go to culinary school and play with knives and fire.” Seizing an opportunity and Sarah’s butt for reassurance, he dove right in. Gone are the fears over developing a perma-frown and shivering under an air conditioning vent huddled beneath a Superman Snuggie tapping at a computer in an office with no exterior window. Now he smiles while sweating over a hot stove, often in tie dye, igniting sautes, layering the flavors of soups or coolly composing a salad.
The Caramel Sutra is an exploration of need as a way of understanding the world we have built and why it works as it does and what’s driving people to do what they do. Knowing that everyone who is eating his food has gone through the vast machine of The Economy to do so means he must repay their efforts with his own.
As for Superman, when he flies up and looks at the Earth, he is not just seeing one place but also one people, something separate and apart from himself but also one entity. Josh tries to see humanity as one entity as well, one big family living on Earth. While all cultures have different takes on cooking, by and large the world cooks use the same techniques with different regional ingredients. So, he has no problem playing with ingredients and cooking methods to create a menu that is you, because no one is you’er than you.
Also a New Orleans native (on her mother’s side), Sarah brings a deep passion for food, music and Josh to the table. Since writing a damn dissertation in Sydney, Australia, Sarah has been making art, supporting arts and crafting joy for others. She is the president of the Evergreen Creative District.
Since her arrival in Colorado, she has continued that work of fostering a place where creativity lives. Sarah also operates and maintains the building for her family and community’s house of worship. Every time we think Sarah is spread too thin, she calls up a little more butta fo ya! That is to say the whole team is in awe of her ability and capacity.
It was through her encouragement that Josh attended culinary school and now she is the vanguard of getting his food into your mouth. But wait there’s more!
Sarah can also help you plan your event. From a humble brunch to a full wedding weekend. A visionary thinker, Sarah can see how a room will look, how a crowd will flow and anticipate when people will need new stimulus. And she’s just fun. Thinking about your satisfaction is pleasure for her. Seeing your anxiety depart always parts her lips in a smile. Her laugh is infectious, musical and easily given. You will want her a guest rather than a caterer, but shes too good not to hire.
Josh and Sofi met in the kitchen of Cactus Jacks before she started managing Kiki’s bowls. She moved here from Peru, met our front of house guru Aiden and their wedding was our first catering gig.
“My dad says if I am comfortable, I am not learning and I need to move on.” Truer words were never spoken, and her skill set shows the fruits of variety.
Good news is, we keep busy and every gig is different so Sofi is sure to be part of the team for a long time. And we are pretty sure Aiden brings a lot of variety to the plate as well.
Sofi is calm as a cucumber and chops them up in tiny, matching parts as well.
Aiden is an Evergreen native and probably served you a drink at Cactus Jacks. Bartending is fun, but he’s more of a manager. He is the front-of-house man and will make sure your event is smooth as silk.
Aiden makes everyone he talks to feel heard and he is responsive. There is no problem to be solved – it’s already done.
Need a hug? They don’t get better than the ones that Aiden has to offer. But anything more belongs to Sofi.
